Vata-Balancing Kitchari (4 Serves, Pressure Cooker)
Tips for extra creaminess:
- SoakĀ both rice and mung dalĀ for at least 2ā3 hours (or overnight if prepping ahead).
- UseĀ 5.5 to 6 cups waterĀ instead of 5.
- AddĀ 1 extra tbsp of gheeĀ after cooking (on top of the 3 used for sautĆ©).
- Pressure cook onĀ high option, thenĀ wait 10 minutesĀ before manually releasing pressure.
- If it still feels too thick after opening, stir in a littleĀ warm waterĀ and gently mix on sautĆ© mode for a softer texture.

- 1 cup diced sweet potato
- 1 cup diced beetroot
- 3 tbsp ghee
- 1 tsp mustard seeds
